THE HAGGIS WI' ONION SAUCE AND BUTTERED MUSHROOMS
BY MATHEW DUNCAN - OUTSIDE CATERING & LOCHEARN HOUSE B&B - LOCHEARNHEAD
INGREDIENTS: For 6 People
- Onion Sauce:
- 1 oz butter
- 1 small onion
- 1 oz plain flour
- 18 fluid oz milk (just under a pint)
- Cream
- Medium haggis
- Mushrooms
- Butter
Melt 1 oz butter. Add 1 small onion finely chopped and gently cook, stirring. Add 1 oz of plain flour, stir and cook for a minute. Add 18 fluid oz of milk ( which is just under a pint) and stir until sauce thickens. Add a little cream just before serving. Garnish with mushrooms cooked in a little butter.
How to serve
After cooking haggis for an hour in boiling water, open haggis and place 2 dessertspoonfuls on 6 plates, coat with onion sauce, top with mushrooms. Makes a lovely starter. ENJOY!!!
