Scottish Raspberry and Apricot Cake

Matthew Duncan started baking at 12 when he received his very own copy of the Be-Ro cook book. This has stood him in good stead as the chef owner of various establishments. Today he runs Lochearn House bed and breakfast in Lochearnhead with his partner Diane, offering "Matthew Specials" along with traditional Scottish breakfasts. Guests are often treated to the tempting smell of freshly baked scones. Matthew also offers outside catering as featured in our January Recipe. Have a go at this simple, tasty cake. Best to use Scottish raspberries for that full, delicious, sweet, authentic flavour. Dalchonzie fruit farm just outside St Fillans supplies punnets of gorgeous rasperries.
INGREDIENTS
- 6oz butter
- 6oz sugar
- 6oz S.R.flour
- 2 large eggs
- Milk - approx 2 tablespoons
- Tin of apricots
- Punnet of fresh Scottish raspberries
- Toasted almonds
- Apricot jam
EQUIPMENT
- 9" spring cake ring - lined
- Blender or mixing machine
METHOD
- Place ingredient (butter, sugar, flour, eggs, milk) in a blender, mix to a batter
- Pour batter into tin
- Place apricots on top
- Sprinkle raspberries on top
- Bake for 35-45 mins at 175c
- Check after 30 mins by using a long needle, if dry this is cooked
- Remove from oven and brush with jam, sprinkle with toasted almonds
- Serve with cream, whipped cream or eat plain with a nice cup of tea

Beautiful Summer Berries
Scotland produces tonnes of delicious berries in summer. Buy seasonal strawberries and rasperries at Damchonzie Farm near St Fillans. Look out for gooseberries and blackcurrants as the season continues through to September. A great time of year to purchase Scottish jam's or enjoy berry recipes and home made jams in our local hotels and restaurants.
